He’s able to use both his Ethereal Blades and a Keyblade, like how (spoiler) Axel can use his Chakrams and now a Keyblade.

Oh! This reminds me of a theory I have, that Keyblade wielders can summon weapons that are not their Keys at will. Riku summoned the Soul Eater at the beginning of the game, Axel could use his Chakrams after he got the Keyblade, and YMX uses the Ethereal Blades in addition to the Keyblade. So I believe that they can summon weapons besides the Keyblade.

Well in most cases some kind of magic makes the character"fit" into the world they travel. Like Sora going to the pridelands or atlantica. And because the worlds that were sleeping were stuck in a specific time maybe sora and rikus form changed to accommodate.

In Atlantica and Pride Lands Donald’s magic allowed them to blend in, yeah. But at the beginning of the game the boys are on the Destiny Islands shore, in their KH1 attire and bodies. They were purposely de-aged in order to relearn the ways of the Keyblade. Going to the Sleeping Worlds doesn’t de-age you, because at the end of the game we see Sora in Traverse Town in his KH2 outfit surrounded by Dream Eaters.

The problem of time travel

The most frequently asked question I’ve gotten since Dream Drop Distance was announced was “Why do Riku and Sora” look like their KH1 ages in this game?”. My initial answer before playing the game was that you weren’t playing as the real Sora and Riku, rather their dream selves, but I was wrong. Now that’ I’ve beaten the game and had time to analyze it my definitive answer is now time travel.

In the flashbacks taking place before the start of the game, Yen Sid explains to Sora and Riku that in order to effectively combat Xehanort they not only must become masters, but they must also forget their self-taught method of using the Keyblade and learn from scratch, the easiest way to do so? Have Sora and Riku revert to themselves at the moment when they first received their keys, the moment the Destiny Islands fell to darkness.

I haven't touched my copy of 3D yet and only watched the subtitled scenes months ago - is it ever confirmed if such changes are always immediate or could they possibly be gradual/unseen depending on how prevalent Xehanort's essence and one's will is in each person? Not trying to argue, just work out the possibilities. This is something that's baffled me quite a bit too.

The golden eyes are the only change I can tell. It’s only after opening Kingdom Hearts that the thirteen darknesses will all become Xehanort.

why is Riku the one that is able to awaken Ven and not Sora?

Because Riku passed the Mark of Mastery exam, by unlocking the seven sleeping Keyholes within Sora’s dream he gained the power to awaken sleeping hearts. Yen Sid explains this in the ending.

Inside of Sora. When his body is located from within Castle Oblivion Riku will be able to awaken it.
